Cooking Healthy Across America, pg. 45. This was my first ever meringue pie, I thought it came out great. Although my meringue wasn't as fluffy as I would like. And I don't know if that was me or the recipe. So I will give it 4 stars. I did thoroughly enjoy it though!

Cooking Healthy Across America, pg. 49. This is my favorite pumpkin pie ever. Do not be surprised though by it's bright orange color. Store bought pumpkin pies are more brown in color, but this one is bright bright orange. I believe it is because of the lack of fillers. No matter, it is delicious. And of course gets all 5 stars!

The Eastern Seaboard

Cooking Healthy Across America, page 77. This is delish!! I loved every bite of it! Plus no starches! So you can have almost any of JoAnnas desserts you want with it. However, I highly recommend it with the Faux Tiramisu Cheesecake in her Diabetic Dessert cookbook. I may try it with Spumoni next time! YUM! It taste more like Eggplant Lasagna though to me, then Eggplant Parmigiana. But, I would definitely make this again, as it was GREAT. 5 stars!

Cooking Healthy Across America, pg 140. I loved this! My husband said he wanted 500 pieces. So it's definitely a hit! We will make this time and again. Gets all 5 stars!

Cooking Healthy Across America, pg. 170. This is absolutely wonderful! My Chicken-Fried steak loving man, loved every bite! And has it often! Definitely 5 stars and beyond. This is true comfort food!

The West

Cooking Healthy Across America pg. 197 or Healthy Exchanges Food Newsletter, October 2000, pg. 12. Another one of Joanna's masterpieces! If you like Caramel Apples, you will love this recipe. Don't let the coconut and pineapple throw you. This is a great caramel apple substitute with only a fraction of the calories! Definitely a 5 star blue ribbon winner!

Cooking Healthy Across America, pg. 213. I highly highly recommend them. My mother in law and I really like them. If you like any Pina-Colada type flavors you will love these. They are very moist, and really ample in portion size as well. They get a 5 stars, for simple, fast, delish, and most importantly really big portions! It's GREAT with, Hawaiian Chili-Another Potful of Recipes page 117. I prefer them baked in a 8 by 8 inch pyrex dish, and served like cake, or sweet corn bread.

The Northwest

Cooking Healthy Across America, pg. 263. These were not my favorite. They were on the dry side, and really not much like a cookie bar in my opinion. They were ok with pudding style frosting, but I won't be making them again. 2 stars.

All-American Classics

Cooking Healthy Across America, pg. 326. This was really really good. I love those onions! The traditional version has been a family favorite for a long time. So I was very happy to get a healthy version. I like it best, though when I omit the cheese, double the onions, and triple the green beans. It is, very, very good and gets all 5 stars!

Cooking Healthy Across America, pg. 332. Awesome! I tripled the recipe so that it would serve 12 or more, and added about 1 cup of peas (so 1/3 cup per a recipe). I had my whole family to cook for. And this made huge servings, enough that every one could have seconds, and they did too!. I split it between two baking dishes instead of 3, and it still came out great.

A few other things I added were, onion powder (not salt), and garlic powder. I also used a bit of sea salt in the noodles while they cooked. Just as a FYI Smart Taste is now making those "no yolk" style noodles with fiber! they are perfect for this recipe.

This is going on the regular dinner rotation. All 5 stars!

Cooking Healthy Across America, pg. 338. This was really really good. I had it with Tofu Shirtaki Spaghetti noodles, cause you get 2 cups of noodles, for 40 calories, 6gms of carb, and 4gms of fiber. It's also great with spaghetti squash. It was comfort food for sure! I highly recommend it, and it gets all 5 stars.

Cooking Healthy Across America, pg. 339. This is one of my absolute favorite recipes. I have always loved sloppy joe's. And hadn't had them in years till this recipe. It's a great standby and I don't seem to ever get tired of it. This is definitely gets 5 stars. Plus it's very fast and easy to make! All the better!
